Ingredients:
2 cups of short-grain white rice, washed and soaked
1/2 kg of spaghetti
1/2 kg of small pasta
1 cup and a half kg of brown lentils
1/2 kg of chickpeas, soaked two hours before preparation and can be replaced with a can of ready-made chickpeas
1 kg of tomato juice
1 tablespoon of sauce
1 teaspoon of vinegar
1/2 teaspoon of sugar
Ground cumin
Ground coriander
3 cloves of garlic
Hot pepper to taste
1/2 kg of sliced onions
1 cup of flour
1 cup of oil
Hot pepper
1/2 teaspoon of black pepper
2 teaspoons of mixed spices
1 teaspoon of fine cinnamon

Steps:
- Put the onion in the flour and stir it well with your hands until all the onion slices are coated with flour, then fry it in a good amount of oil until it becomes golden and crunchy.
- Drain the onion from the oil well and leave it on a napkin until the oil is absorbed.
- Boil the pasta with a little salt and a spoonful of oil, drain and set aside.
- Boil the lentils with 4 cups of water and add 2 spoons of salt, black pepper, spices and ground cinnamon.
- When the lentils are cooked, drain the water to use the lentil water to cook the rice.
- Put the oil in which the onion was fried in a pot and add the soaked and drained rice and stir it well and add 2 and a half cups of water and salt to taste.
- Chop the garlic with salt and take some of it and fry it in some of the previous oil, then add vinegar, sugar, tomato juice, salt, cumin, coriander, the rest of the raw minced garlic, tomato sauce and hot pepper and leave it on the fire until it becomes a thick sauce. Thus, the Egyptian koshary sauce is ready.
- Boil the chickpeas in advance in a large amount of water with the addition of some minced garlic, salt and cumin. This can be replaced with a can of ready-made chickpeas, washed well from preservatives and drained.
- To make the Egyptian koshary sauce, take some of the chickpea water after boiling and add some minced garlic with salt and lemon juice.
- Finally, to serve the Egyptian koshary, first put two spoons of rice, then pasta, then lentils, sprinkle the fried onions on the sides, chickpeas and finally the sauce and the sauce.
